Protein Bar
Ingredients:
1 cup quick-cooking or old-fashioned rolled oats
1 15-oz can unseasoned, drained and rinsed black beans
½ cup moist dates
½ cup unsweetened cocoa powder
3 tbsp coconut milk
2 tsp vanilla extract
Instructions:
- Line a loaf pan with wax paper.
2. Process the oats in a food processor until it is a fine powder; transfer to a bowl.
3. Add the beans, dates, vanilla, cocoa powder and coconut milk to the food processor until very smooth. Add the ground oats. Pulse until mixture is well-blended and comes together to form a dough.
4. Transfer mixture to prepared pan and press to flatten.
5. Refrigerate for 1 hour then remove and cut into bars.
6. Sprinkle with cocoa powder.
7. Individually wrap bars and store in refrigerator for up to 1 week.
